REPCO®
ZYME 5000 is a fungal alpha amylase enzyme premix derived from Asperigillus
oryzae. It is standardized for alpha amylase at a minimum 5000
SKB/gm.
Fungal alpha
amylase enzyme is easily inactivated by heat of baking so more may
be added as needed to obtain desired level of gas production during
fermentation. Flour treated with REPCO® ZYME 5000 is used to
supplement the natural diastatic activity of wheat flour to support
fermentation without adding sugar. REPCO® ZYME 5000 also improves
dough handling and extensibility.
